Super Bowl Menu

Pulled Pork
Simple Fantastic Recipe

Ingredients
1 pork butt
1 2 liter bottle of Root Beer
BBQ Sauce
Hamburger Buns

Directions
Place the pork in a slow cooker; pour the root beer over the meat. I left about an inch from the top of the meat. Cover and cook on low until well cooked and the pork shreds easily. I cooked all night long. Note: the actual length of time may vary according to individual slow cooker. Drain well. Shred meat. Stir in barbecue sauce. Serve over hamburger buns.
Potato Skins
Little Time consuming cooked the potatoes and scooped them out the night before.
Ingredients
10 baking potatoes
shredded cheddar
1 package bacon
chives or green onions
vegetable oil
Bake the potatoes on 400 until done. Cool them and cut into 2 the long ways. Scoope out the potatoes until there is about a 1/4 of the potatoe left. This is where I put them in the fridge over night to finish the next day. If you want to go ahead and make them. Next I put a couple of tbsp of veg oil in a bowl and brushed the insides and outsides of the potatoes and put them on a cookie sheet then salted them. I put them back in the oven for 5-10 minutes on 400 to slightly brown them and it makes them a little more crispier. I took them out and cooked the bacon and let it completely cool and chop finely. I added the bacon to each potato half and then added the shredded cheese. I put it back in the oven for a couple of minutes just to let the cheese melt. Took out and chopped up the green onion and added to the potatoes. You can add sour cream if you want.
Sopapilla Cheesecake
Easy & really good

Ingredients
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
2 (8 ounce) packages refrigerated crescent rolls
1/2 cup melted butter
1/2 cup white sugar
1 teaspoon ground cinnamon
Directions
Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth; set aside.
Unroll the cans of crescent roll dough, and use a rolling pin to shape each sheet into 9x13 inch rectangles. Press one sheet into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough, and brush with melted butter. Stir together 1/2 cup of sugar with the cinnamon in a small bowl, and sprinkle evenly over the top of the cheesecake.
Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Allow to cool 10 minutes before serving.

Laundry and the Devil




Do you have any idea how much laundry you would have to do if it piled up for a week? Well do you want to guess what I have been doing for the past two nights. This past week has been such a test to how patient I can be. Sometime I just wish I could be a stay at home mom, and actually have a clean home everyday. No nevermind, I don't want to be a stay at home mom. Maybe if I could call Merry Maids and they could come twice a month. Bryan really tested me a couple of nights ago. I asked him to go get the food we put in ice chests outside (so it wouldn't ruin) and put back in the fridge. You know what he said? This one blew me away. Mine you he was laying down watching Sports Center. His response was "That's not my department." If you know me you know you can probably guess how I reacted since some people use to refer to me as Hot-Head Harvey. I actually was so shocked I didn't say anything, but I gave him the most deadliest look I could possibly give. I know he saw horns forming from my forehead and smoke coming out of my ears. I was so mad inside, and so proud I didn't say anything. I knew immediately I looked scary because he looked at me and got up and took care of it. I wish this worked all the time.

We have electricity. It came back on last night about 6:00. It has been a week since the lights went out. It is amazing how much more at ease I feel now.

Ice Storm








This has been by far the worse winter I have ever seen, and I here it isn't over. The ice storm hit us really hard. We haven't had electricity since last Thursday, and I hear we may not have power until Friday. Even worse I hear there may be another storm on it's way. Thursday the power went off at work about 3 and we went home we didn't have any power so we built a warm fire in our new wood burning stove we put in this fall (thank goodness). Bryan, I and the kids spent the evening and Friday morning huddled up just trying to keep warm and trying to keep the kids occupied. We decided to leave and head for Fort Worth to Bryan's parents. We enjoyed the electricity for a couple of days. Then we decided we better get prepared to head back home. So I got on the Internet and looked for a generator. There is like a million different kinds of generators. Big, small, expensive, even more expensive, portable, and standby. Your gonna spend at least 500 dollars. I finally decided to get on Craigs List and look and we got really lucky the first and only add I called he had a big 8000 watt generator with a Briggs & Stratton motor only 2 years old for 600 dollars we really lucked out. It was in Burleson only 30 minutes away. So Bryan and his dad headed over there Sunday morning and picked it up. I went to Target and stocked up on bottled water, canned foods, and stuff we were gonna need. So we got home Sunday evening and set up. Everything has worked out not great, but okay. We got tv and dish, we have our fridge and deep freeze going. Thank goodness nothing defrosted while we were gone in the deep freeze. Now the fridges freezer that is another story it thawed out and I opened it when we got home and it stunk so I shut it real quick and we turned it on so whatever stunk has refroze and hopefully the smell won't be as bad when we can start throwing it all out. Luckily when we left I took everything out of the fridge that would ruin and I put it in an ice chest outside and it all stayed cold. Well we are back at work today and it seems a little weird, but hopefully the worse of it is gone. When we left Friday we saw over 20 electric poles snapped in 2 on the highway, and when leaving the house and driving on our rode we actually drove over the wires from a pole laying across the road. It is really devastating seeing all the poles down and knowing there are so many people that don't have anyone to help look after them, or wonder if anyone even knows they are there. Hopefully everyone will stay safe and keep warm.
